I literally live for
pancakes! Salty or sweet, small or big, thin or thick I love them all! But I
love this recipe in particular because it is super easy to prepare, and it
contains my all time favorite, white chocolate!
Ingredients:
½ cup
coconut
¼ cup
toasted coconut
½ cup white chocolate morsels
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white
sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted
Instructions:
Sift the flour, baking
powder, salt and sugar in a bowl. Create a well in the center and pour in the egg,
milk and melted butter and mix until smooth and even. Fold the coconut in. Heat a lightly oiled griddle or frying pan
over medium high heat. Using a ladle pour the batter onto the griddle, using about
¼ cup for each pancake. Drop the white chocolate morsels in. Once you see
bubbles appear n the top or the edges are dry flip the pancake. Cook for an
extra minute or two, or until golden brown on both sides. Garnish the pancakes with
syrup, butter and toasted coconut.
