Eggnog or the egg milk punch is a beverage we are all
familiar with. This Christmas must, is definitely one of my favorite things
about Christmas, and winter in general.
The rich, sweet, creamy
and frothy texture of this beverage is something I crave for all year long. Ok, maybe I crave fluffy pancakes a little bit more… The collection of pancake recipes hide the best
one: that for the eggnog pancakes!
Eggnog Pancakes
Let’s see what does it
take to include this America’s staple into a pancake. Any hybrid of the two of
the best-loved treats among Americans is bound to be delicious.
The thing is this: you
can go for a store bought eggnog, or you can prepare your own. If you want
thinner pancakes you can use more than 2 cups of this magical drink to put in
the batter.
Just for an extra kick
add half a teaspoon of rum. This will enhance the festive flavors a Christmas
dessert should have.
For serving use
another American staple: maple syrup.
Just a tiny Christmas
tip: top your pancakes with a white glaze and use some red and green sprinkles or
chocolate curls as a finishing touch.
Vegan Eggnog Pancakes
But, there is not a
reason why people who have decided to live on a vegan diet should not enjoy
this spectacular combination. This is why I am going to tell you how to prepare
vegan eggnog hotcakes. It might sound a tiny bit ironic since the beverage’s
name itself includes the word “egg”, but the vegan variation is nothing short of
tasty!
Prepare your vegan
eggnog. Instead of the regular milk go for 2 cups of cashew milk (or any other
non-dairy milk), for the desired thickness of the eggnog go for half a cup of full-fat
coconut milk. Skip the egg part, because you will get the desired frothy
texture from the coconut and cashew milk variants. No eggnog recipe can go
without cinnamon, cloves or nutmeg, so make sure to add them.
If you are too lazy or
simply don’t have the time to prepare homemade eggnog prior to preparing the
hotcakes, you can always go for a store bought vegan holiday nog.
For the vegan topping,
use coconut butter, or sprinkle some coconut flakes. (Of course, maple syrup is
always a good idea).
Enjoy all the perks of
the holidays. But, more importantly, don’t forget what Christmas is all about:
Making other people happy. So, make your friends and family happy. Show them
you care by preparing some fluffy, soft, and deliciously decadent stack of
pancakes. Trust me, all of you will have a whale of a time (and it is not going
to be because of the rum or bourbon in your eggnogs J.
