If you are looking for
a healthier version of the regular pancake, but just as sweet, this recipe is
your answer. These sweet zucchini pancakes will satiate every sweet craving you
might have and easily replace the regular pancake. Only, you will be healthier
and happier.
Servings: 10
Ingredients:
1 cup coarsely
shredded zucchini
2 tablespoons flaxmeal
1 tablespoon honey
2 tablespoons butter, melted
1 cup buttermilk
2 eggs, separated
1 cup flour
¾ teaspoon baking soda
¼ teaspoon salt
Instructions:
Ina large bowl whisk
the flour, baking soda, and salt together. Beat the egg yolks and add them to
the dry ingredients together with the buttermilk. Stir everything until just
combined. Proceed to adding the melted butter, honey, flaxmeal, and of course,
the zucchini. Stir to combine. Whisk the egg whites and fold them into the mixture.
Heat a griddle to medium heat (or if you have an electric griddle, heat it
close to 400 degrees). Using a ladle pour the batter onto the hot griddle and
as soon as the edges look dry, or approximately 2-3 minutes, flip and cook for another few minutes. Serve the
pancakes with syrup and butter or with cottage cheese, honey and blueberries.
