Easy White Chocolate Coconut Pancakes




I literally live for pancakes! Salty or sweet, small or big, thin or thick I love them all! But I love this recipe in particular because it is super easy to prepare, and it contains my all time favorite, white chocolate!


Ingredients:


½ cup coconut
¼ cup toasted coconut
½  cup white chocolate morsels
1 ½  cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
 3 tablespoons butter, melted


Instructions:


Sift the flour, baking powder, salt and sugar in a bowl. Create a well in the center and pour in the egg, milk and melted butter and mix until smooth and even. Fold the coconut in.  Heat a lightly oiled griddle or frying pan over medium high heat. Using a ladle pour the batter onto the griddle, using about ¼ cup for each pancake. Drop the white chocolate morsels in. Once you see bubbles appear n the top or the edges are dry flip the pancake. Cook for an extra minute or two, or until golden brown on both sides. Garnish the pancakes with syrup, butter and toasted coconut.

Quick and Easy Coca-Cola Pancakes




Any coca-cola lovers out there? Well, my friends, if you love coca –cola and pancakes, today is your lucky day! You are about to be given the secret to a tastier breakfast. The coca cola pancakes are the ultimate sweet experience and are easy-peasy. Roll up your sleeves and start preparing yourselves a batch.

Ingredients:


The Pancakes:
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons granulated sugar
1 ¾ cups plus 2 tablespoons soy milk
¼ spoon almond extract
1 tablespoon flax meal, ground 
2 tablespoons coconut oil, melted and cooled

The Syrup:
3 tablespoons butter
 1 ½ cups brown sugar
¼ teaspoon cinnamon
½ cup Coca-Cola


Instructions:


In a large bowl mix the flax meal with the milk and let stand for 5 minutes.  In a separate bowl, combine the flour, salt, sugar, and baking powder. Add the flax egg, almond extract, and coconut oil to the milk mixture and whisk them together until combined. Pour the wet ingredients onto the dry ones. Cook until the pancake is set around the edges and starting to brown and crisp, flip and cook for 2 more minutes. As for the coca-cola syrup, just stir all ingredients in a saucepan and bring them to a boil. Serve the pancakes warm and drizzle the syrup onto them. Yum!

Quick and Sweet Zucchini Pancakes



If you are looking for a healthier version of the regular pancake, but just as sweet, this recipe is your answer. These sweet zucchini pancakes will satiate every sweet craving you might have and easily replace the regular pancake. Only, you will be healthier and happier.
Servings: 10

Ingredients:

1 cup coarsely shredded zucchini
2 tablespoons flaxmeal
1 tablespoon honey
2 tablespoons butter, melted
1 cup buttermilk
2 eggs, separated
1 cup flour
 ¾ teaspoon baking soda
¼ teaspoon salt

Instructions:

Ina large bowl whisk the flour, baking soda, and salt together. Beat the egg yolks and add them to the dry ingredients together with the buttermilk. Stir everything until just combined. Proceed to adding the melted butter, honey, flaxmeal, and of course, the zucchini. Stir to combine. Whisk the egg whites and fold them into the mixture. Heat a griddle to medium heat (or if you have an electric griddle, heat it close to 400 degrees). Using a ladle pour the batter onto the hot griddle and as soon as the edges look dry, or approximately 2-3 minutes, flip  and cook for another few minutes. Serve the pancakes with syrup and butter or with cottage cheese, honey and blueberries.

Eggnog Pancakes Are All You Need This Christmas

Eggnog or the egg milk punch is a beverage we are all familiar with. This Christmas must, is definitely one of my favorite things about Christmas, and winter in general.
The rich, sweet, creamy and frothy texture of this beverage is something I crave for all year long. Ok, maybe I crave fluffy pancakes a little bit more… The collection of pancake recipes hide the best one: that for the eggnog pancakes!

Eggnog Pancakes




Let’s see what does it take to include this America’s staple into a pancake. Any hybrid of the two of the best-loved treats among Americans is bound to be delicious.
The thing is this: you can go for a store bought eggnog, or you can prepare your own. If you want thinner pancakes you can use more than 2 cups of this magical drink to put in the batter.
Just for an extra kick add half a teaspoon of rum. This will enhance the festive flavors a Christmas dessert should have.

For serving use another American staple: maple syrup.
Just a tiny Christmas tip: top your pancakes with a white glaze and use some red and green sprinkles or chocolate curls as a finishing touch.

Vegan Eggnog Pancakes




But, there is not a reason why people who have decided to live on a vegan diet should not enjoy this spectacular combination. This is why I am going to tell you how to prepare vegan eggnog hotcakes. It might sound a tiny bit ironic since the beverage’s name itself includes the word egg, but the vegan variation is nothing short of tasty!

Prepare your vegan eggnog. Instead of the regular milk go for 2 cups of cashew milk (or any other non-dairy milk), for the desired thickness of the eggnog go for half a cup of full-fat coconut milk. Skip the egg part, because you will get the desired frothy texture from the coconut and cashew milk variants. No eggnog recipe can go without cinnamon, cloves or nutmeg, so make sure to add them.
If you are too lazy or simply don’t have the time to prepare homemade eggnog prior to preparing the hotcakes, you can always go for a store bought vegan holiday nog.
For the vegan topping, use coconut butter, or sprinkle some coconut flakes. (Of course, maple syrup is always a good idea).

Enjoy all the perks of the holidays. But, more importantly, don’t forget what Christmas is all about: Making other people happy. So, make your friends and family happy. Show them you care by preparing some fluffy, soft, and deliciously decadent stack of pancakes. Trust me, all of you will have a whale of a time (and it is not going to be because of the rum or bourbon in your eggnogs J.


Oh, Cheese! The Softest Pancake Recipes Are Coming Your Way

Cheese pancakes – rich, fluffy, soft, creamy! So many attributes for super easy pancake recipe. Cheese makes pancakes special because it adds a slightly salty or sour-y twist to the sweet base. Not to mention how healthy it is! Oh, and it can also be used in savory variations.
Cheese is a rich source of calcium, protein, phosphorus, sodium and saturated fat. It is widely known that cheese, like all dairy products, is very good for the bones, but it is also good for protecting the eyes and boosting the digestive system. And if you choose raw, organic, and low-fat cheese, you’ll be able to enjoy it completely guilt-free.

Sweet Cheese Pancakes


Cottage cheese usually consists of 4% fat and 11% protein, which makes it a perfectly creamy and low-fat addition to your favorite sweet treats. It combines best with lemon or strawberries. My favorite recipe involves 1 cup of low-fat cottage cheese, a teaspoon of lemon zest, a tablespoon of lemon juice, 3 tablespoons of poppy seeds and a teaspoon of vanilla.
Ricotta can also be combined with lemon and strawberries, but it often pairs with orange or blueberries as well. Ricotta is often used to produce flourless, healthy pancakes. ½ cup of this cheese, combined with only a ¼ cup of vanilla-flavored protein powder, and 4 eggs. A simple protein-packed recipe, perfect for athletes and physically active people!
Add ¼ cup of cream cheese to the batter, then prepare a rich frosting you will use to for a stack of Pancake Cheesecake. The frosting is made with 4 oz. cream cheese, 4 oz. butter, 2 tablespoons cheesecake flavored pudding mix, 1 tablespoon milk, and 1 crumbled graham cracker.
Besides adding them to the batter for extra creaminess and fluffiness, you can use all kind of soft cheeses to prepare cheese glaze toppings. The best option is the classic cream cheese (2 oz.), combined with some heavy cream, half-and-half, or milk and vanilla. If you don’t have cream cheese, melt some cottage or ricotta cheese. This glaze works perfectly drizzled on top red velvet pancakes (use a piping bag for that purpose).
An even richer cheese-based topping option is the Caramel Cream Cheese Frosting, made by mixing caramel sauce and cream cheese. This one is ideal for pumpkin-cinnamon or chocolate pancakes.

Savory Cheese Pancakes



Feta is one of the healthiest types of cheese out there. It is saltier than the above mentioned cheeses, which makes it perfect for various savory dishes, including pancakes. Combine it with spinach (1/2 bunch of chopped spinach and ½ cup crumbled feta). The batter is standard, without the sugar, of course. Complement with chopped chives and cloves.
Mix 1/4 cup shredded Swiss cheese with 4 cups of shredded potatoes, one package of cream cheese, plus 2 eggs and 2 tablespoons of flour. Complement with chopped onions, salt, and pepper. Serve this light lunch with sour cream on top.
Another harder and stronger-tasting cheese is cheddar. Prepare one big sugarless pancake, with some ham or bacon slices on top, plus crumbled cheddar. Bake in the oven for about 15 minutes. Add tomato slices or ketchup, onions, olive halves, oregano and voila! A pizza pancake.

Pancakes that the Leftovers Fans will LOVE


Have you seen the Leftovers TV series? If not, you should dedicate your next hour of spare time to this HBO drama series. I have been caught on it for quite some time so much so that I became obsessed with the Sudden Departure. Ok, I didn’t start building bunkers underground, or pile up foods and other necessities, but I started worrying about not throwing food away.
Today’s post is all about leftover foods turned into pancakes. So if you are looking for a regular pancake recipe, you won’t find it here. But if for any reason you need recipes that will help you re-purpose your leftover food then stay and read through.

Turn your leftovers into pancakes



Lucky for me, I stumbled upon this Ultimate Guide To Perfect Pancakes|MyGreatRecipes blog post.
The very first idea that popped to mind, and of course I almost didn’t need the internet’s help for this, was the re-use of ripe bananas. But, mind you, this is not a banana bread recipe, but a banana bread pancakes recipe. It’s not that there is much of a difference, flavor-wise, but I am a bit more prone to pancakes than to banana bread. Honestly, I don’t know why, maybe is something to do with the texture, or the fact that I can top my pancakes with whatever I want, in this case vanilla maple glaze.

Leftover Sweet Potato Pancakes



The Sweet PotatoPancakes made with leftover mashed sweet potatoes are a great re-imagination of your leftover mashed sweet potatoes. Use them in your regular pancake batter and you will end up with soft, moist and scrumptious pancakes. To boost the flavor of this dish, add some sour cream, which paired with the sweetness of the sweet potato will result in a pancake bite filled with taste contrasts. Honestly, I didn’t expect these to be THAT good, but they turned out to be crowd-pleasing. (No I didn’t feed the whole town of Mapleton, but my Garvey family, includes my in-laws as well).

And who said a dish made out of leftover food cannot look luxurious and be luscious. If even for a second you thought there’s no such dish, go ahead and try the Boxty, the Irish Potato Pancake. You will be surprised at how rich in flavor and incredibly decadent these pancakes are. Ok, part of their beautiful appearance can be put down to the many other ingredients like mushrooms, onions and sausage that are used to garnish them, but you can just as easily eat the pancake as it is, and it wil still be your favorite salty pancake ever!
