Quick and Easy Coca-Cola Pancakes




Any coca-cola lovers out there? Well, my friends, if you love coca –cola and pancakes, today is your lucky day! You are about to be given the secret to a tastier breakfast. The coca cola pancakes are the ultimate sweet experience and are easy-peasy. Roll up your sleeves and start preparing yourselves a batch.

Ingredients:


The Pancakes:
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons granulated sugar
1 ¾ cups plus 2 tablespoons soy milk
¼ spoon almond extract
1 tablespoon flax meal, ground 
2 tablespoons coconut oil, melted and cooled

The Syrup:
3 tablespoons butter
 1 ½ cups brown sugar
¼ teaspoon cinnamon
½ cup Coca-Cola


Instructions:


In a large bowl mix the flax meal with the milk and let stand for 5 minutes.  In a separate bowl, combine the flour, salt, sugar, and baking powder. Add the flax egg, almond extract, and coconut oil to the milk mixture and whisk them together until combined. Pour the wet ingredients onto the dry ones. Cook until the pancake is set around the edges and starting to brown and crisp, flip and cook for 2 more minutes. As for the coca-cola syrup, just stir all ingredients in a saucepan and bring them to a boil. Serve the pancakes warm and drizzle the syrup onto them. Yum!
